SPICY AND SOUR SOUP WITH SHRIMP

Cook Time: 10 min
Serves: 4
Ingredients
3 cups Chicken Broth
2 cups Water
4 stalks Lemongrass, pounded and cut 2 inches
1 1/2 inch Galangal (like ginger)
3 cup Mushrooms, sliced
1.5 lb Shrimp
4 Thai peppers, cut in half longwise
10 Makrut lime leaves
1/2 cup Coconut Milk
Cilantro leaves, for garnish

 

Seasoning sauce
4 Tbsp Fish Sauce
4 Tbsp Lime Juice
3 Tbsp Nam prik pao (roasted chili paste)

Preparation Steps
Step 1. In a bowl make the seasoning sauce.
Step 2. Bring broth to a boil, add lemongrass, galangal, and lime leaves.
Step 3. Bring back to boil and add mushrooms. When they are half cooked, add shrimp but don't stir until shrimp turns pink to reduce fishiness flavor.
Step 4. When shrimp turns pink, add seasoning sauce, chili peppers, and coconut milk. Simmer for 1 minute then turn off heat.
Step 5. Discard lemongrass, galangal, and lime leaves. Sprinkle with cilantro and serve.
